Braised coconut spinach with chickpeas and lemon

   
Last night I wanted to make something with chickpeas. I found this one at thekitchn.com.

We had nearly everything in the house, except for sundried tomatoes and fresh ginger, oh and cilantro. 

We also had it with rice instead of on a sweet potato, which we do have but i didn’t want to deal with them tonight. 

This meal was super filling, and a tasty vegitarian choice. Dave and I have been trying to eat less meat lately and this was a good choice. 

Other than the rice this was a one pan meal, which I love. It cuts down on dishes, things I have to watch in the kitchen. It makes cooking while chronically ill a whole lot easier. 

 

It turned out really tasty! I love cooking with coconut milk.
