Family fun 


My sister and her family were here for the week and we had so much fun! 

Because I’ve been working full time, I missed out on a lot of the activities they did while here, but on Sunday we all went to visit Fort Steele which was a lot of fun. 



We rode the train there. It isn’t super long but the crow that it takes you to is breath taking and such a reminder of why I love living here. 


My nephew helped make a belt at the leather shop. So cool. He did a great job! 
My sister and her family all left this morning. I’m sad to see them go! I hope they return soon! 

Lemon Kale Penne 

The kale in my garden is growing so much. Even though I have a few plants, a little goes a long way. You can pick some of the leaves and the plant will keep growing through out the season. 


Using lots of butter, lemon juice and white wine, onion, garlic, kale and fresh tomatoes. I used a firm Parmesan like cheese (I can’t remember exactly what it was now) which gave it a nice kick. So good and so easy. 

Super Kootenay Sunday 

Today we had a very East Kootenay Sunday! 

We went for a short hike in the Kimberely Nature Park. It’s such a beautiful place to walk, hike or bike. And it’s only a few blocks away from our home. 


The dogs love being off leash in the forest. So many smells, they both love running along the trails. 


Micky loves to drink from creeks. I mean, look at how clear that water is. It must be so refreshing. 


There wasn’t that much of a mountain view on the trails we went through, just a little peek a boo. But it’s all gorgeous. 


After we went and checked out Over Time Beer Works. They are a brewery that opened up a few months ago in town. I love their Copper Top Red Wheat Ale. So good. 



After we went to The Shed and had some nachos and their loaded baked potato. So good!!! 

I love where we live. So greatful we made the choice to move here! 

Very easy summer brunch

Hey all! 

I’ve been sick this weekend. Like on the floor wishing someone would put me out of my misery sick. 

I’m only just starting to feel human again but I think I over did it doing some stuff in the garden. Ah well, so is life right? 

So here is a really tasty and super simple meal Dave and I had a week or so ago which would make a nice weekend brunch. 

Strawberry Walnut Salad

This is such an easy salad to make and it’s so delicious. Just chop up some strawberries and green onions. 

Pour some balsamic over it. I used some raspberry balsamic from Presidents Choice. 

Add some lemon juice.

I used about a tablespoon of stevia for sweetness, since the balsamic alone is quite bitter on its own. 


Thence serve it on a bed of romaine and top with walnuts. So good! 


Then I made some fried sweet potato chips witth some green onion, garlic and chilli powder. 


I made egg muffins with left over guacamole, Valentina hot sauce and  cilantro. So simple and seriously good. 


So good and really simple! 

I’m currently trying to eat some Cheerios since I haven’t been able to eat anything lately. Hoping I can eat something good again!

Hello!! 

It’s been a long time since I posted anything, so here I am saying hello! 


We have really been enjoying our new house and our new town. We’ve (almost) finished setting up our new place and we and the dogs have really settled in. 

I actually started working again, at a really fun restaurant in town. So far so good! I’m enjoying it so much. It’s a rather “active” position (instead of sitting at a desk) and I haven’t had a lot of joint pain. Really nothing that compromises my work or has made me miss sleep. 

Our small urban garden is all set up and things are growing (always a good sign). We have an apple and a chestnut tree in our yard so we will have both of hose to harvest later on as well. 

Our new town is really great, super walkable and we always run into new friends when we are out and about. There’s quite an established arts community here so there’s always great live music and theatre.

I’m still debating what direction I want this blog to go forward as. I keep getting asked if I am going to update it soon (and more often).

I’m definitely in a good routine now where I hope that will be the case, and many things have happened that I think I have some good posts coming.

Welcome Mandy! 

Yes I realize I’ve been MIA for awhile here, please excuse my absence! 

We are getting ready to move into our new house in Kimberely, BC, finishing up the semester, dealing with my weird and painful symptoms and welcoming a new dog into our family. 

  
We adopted Mandy from a local a wonderful person/business here in the Kootenays. Karla from The Playpen had rescued little Mandy from a shelter in Idaho where she was for over a year. I can’t imagine why she was passed up for so long. She is a very sweet dog, who had a rough time. 

Mandy was very shy and weary when she first came home, but everyday she is warming up to us more, and showing us her personality. 

After adopting Mandy, I will definitely adopt all of my future dog pals. Adopting a dog feels so wonderful. We love Mandy so much.
